“I have known Erin Macdonald, R..D. Nutrition, Fitness and Wellness Coach for well over a year now. Her passion for helping others, “clean eating” and cooking has truly opened my eyes to a healthier lifestyle. I have never met someone who is so open and willing to share her family recipes, ingredient preferences and wellness goals. She has truly become my “go to” for all of my cooking, nutrition and fitness related questions. I absolutely love Erin’s monthly cooking classes. As a woman in my mid-thirties who is finally taking the time to learn how to cook, Erin has made my leap into healthy cooking enjoyable and fun. It has been an amazing experience watching Erin prepare healthy meals right before my very eyes. Plus, Erin is so knowledgeable in the field of nutrition, fitness and wellness and it shows. She is genuine, down to earth and welcomes questions throughout her cooking classes. Each month, I look forward to taking home a new recipe sheet with delicious, healthy creations to make for my family. It is invaluable to have someone to consult on what to feed your family, especially when there are dietary restrictions to be considered. Erin also encourages us to make variations to her recipes to accommodate the pickiest of eaters. Before I met Erin, I viewed cooking as a chore and found it difficult to prepare a meal that was both healthy and satisfying at the same time. Erin has taught me you do not need to skimp on flavor to be healthy. By selecting fresh produce, herbs and cooking with a variety of ingredients to pull out a food’s natural flavors, one really doesn’t have to sacrifice flavor. Erin is a master at pairing foods and substituting quality ingredients for those ingredients that pose no benefit to your body’s overall well-being. I have even shared family recipes with Erin that are high in fat and calories that she has been able to “lighten up” by simply making a few ingredient substitutions. Like most folks these days, I do not have a lot of time to spend cooking in the kitchen. Luckily, Erin is all about keeping things simple and always offers time saver options while preparing her delicious recipes. We all know breakfast is the most important meal of the day, but many of us rush out the door without having a decent breakfast. I am beyond excited about the launch of Erin’s new book on healthy breakfast recipes which includes gluten free chocolate chip pancakes and a hearty oatmeal you can prepare in the crockpot the night before. I hope you find Erin’s recipes as beneficial and enjoyable to prepare as I do. Erin is cooking up more than great food….She is cooking up an awareness that eating healthy and achieving wellness is truly within grasp.
“Our family consulted with Erin before both of our daughters went off to college. We were all active and relatively healthy eaters, but Erin had so many great suggestions on how to eliminate some “not so good” choices in our diets. She also made recommendations on vitamins for each of us based on our individual needs. We all benefited from the meeting and really used her suggestions to improve our health.
I did not know that we would face a big challenge in the next year with our oldest daughter. Our child began to lose significant weight, and my husband and I were very concerned. We hadn’t seen Erin in over a year, but I reached out to her. Erin responded immediately with solid advice and compassion. She was amazing. She met with our daughter. Her demeanor was so perfect. She treated her with respect and so much understanding. They developed a plan together, taking into consideration her food limitations. Erin’s goal was to help our daughter reach a healthy weight and understand the role of food and its nutritional value. Over time, our daughter has resumed a healthy weight and we are so relieved.
We owe so much to Erin. I have recommended Erin to so many of our friends and family. She is very knowledgeable, and she responds to questions and concerns quickly. She embraces her patients and addresses their issues in a positive and professional way. We have so much respect for Erin and we are indebted to her!”
