Erin has taught me you do not need to skimp on flavor to be healthy. By selecting fresh produce, herbs and cooking with a variety of ingredients to pull out a food’s natural flavors, one really doesn’t have to sacrifice flavor. Erin is a master at pairing foods and substituting quality ingredients for those ingredients that pose no benefit to your body’s overall well-being. I have even shared family recipes with Erin that are high in fat and calories that she has been able to “lighten up” by simply making a few ingredient substitutions. Like most folks these days, I do not have a lot of time to spend cooking in the kitchen. Luckily, Erin is all about keeping things simple and always offers time saver options while preparing her delicious recipes. We all know breakfast is the most important meal of the day, but many of us rush out the door without having a decent breakfast. I am beyond excited about the launch of Erin’s new book on healthy breakfast recipes which includes gluten free chocolate chip pancakes and a hearty oatmeal you can prepare in the crockpot the night before. I hope you find Erin’s recipes as beneficial and enjoyable to prepare as I do. Erin is cooking up more than great food….She is cooking up an awareness that eating healthy and achieving wellness is truly within grasp.

“Our family consulted with Erin before both of our daughters went off to college. We were all active and relatively healthy eaters, but Erin had so many great suggestions on how to eliminate some “not so good” choices in our diets. She also made recommendations on vitamins for each of us based on our individual needs. We all benefited from the meeting and really used her suggestions to improve our health.

I did not know that we would face a big challenge in the next year with our oldest daughter. Our child began to lose significant weight, and my husband and I were very concerned.
